I’ve been craving doughnuts for the longest time, but the fried ones leave my tummy feeling upset. So, while browsing Amazon & filling my cart with things I didn’t need, I came across a doughnut pan! I was so excited for this $8 gem that of course I had to bake pumpkin ones, duh. So for those of you who asked and didn’t ask, you’re welcome…
For the doughnuts
1/2 a cup of 100% pure pumpkin
2 cups all purpose flour
1 tsp baking soda
2 tsp of cinnamon, or as much as you’d like 😉
1 cup granulated sugar
1/2 cup vegetable oil
1/2 cup milk
1 tsp vanilla extract
4-6 tsp whole milk
1/3-1/2 cup powered sugar
Preheat oven to 350 degrees. In a large bowl mix the flour, cinnamon, baking soda, and sugar together. Then add the vegetable oil, milk, eggs, and pumpkin. Mix until smooth. Grease doughnut pan and pipe doughnut batter into pan. Bake for 10-12 minutes.
Mix vanilla, milk, and powdered sugar until smooth.
For an old fashioned looking glaze use a spoon while doughnut is semi-warm. For a smoother look, dip doughnut into glaze face down when doughnut is completely cooled down.
