After my workout the other day I was really wanting a protein bar and I had just eaten my last one yesterday. So, I rummaged through my pantry to try and see what I could whip together and I came up with these vegan protein bars. Super simple and it involves no baking! #winning!
1/2 cup pure maple syrup
2 cups oatmeal
1/4 ground flaxseed
1 cup of peanut butter
1/2 cup vegan chocolate chips
Combine maple syrup, flax, oatmeal and about 1/2 of the peanut butter into a bowl. Take a non-stick sheet pan and pat down the mixture. Melt 1/2 of peanut butter and pour over the oatmeal mixture evenly. Then, melt the vegan chocolate chips and pour over top of peanut butter. You can cover evenly or just drizzle. Pop them into the freezer for about an hour and enjoy 🙂
